Watermelon Salsa

This past week I had the honor of being my sisters maid of honor in her wedding. ( Pictures to come ). It was held where she lives in Naples Florida, the ceremony being on the beach and the reception held at her Italian restaurant Cafe Luna. The weather was beautiful and everything went exactly as it should. It was so nice to see a wedding go smoothly and truly be about love. Given that my wedding is less than 3 months away it eased my stress a bit!

The night after the wedding my sister and her husband had a bar b g at their house to get people together that were still in town. We went shopping beforehand and at the store sampled an amazing salsa made out of mostly watermelon. I had never thought to use watermelon in a salsa but it was amazing! I asked around and they were kind enough to give me the recipe. I wanted to share it with all of you!

 

* 3 cups watermelon chopped

* 2 avocados diced

* 1/2 tablespoon jalapeno peppers

* 1/2 cup green bell peppers

* 2 tablespoons lime juice

* 1 tablespoon green onions chopped

* 1/2 tablespoon garlic salt

Mix everything together and let set for 30 min to an hour.

Happy Birthday Jason

This past weekend we celebrated my fiance’s birthday. Since he wasn’t here on his actual birthday ( it was on February 2nd and he was on base) I wanted to make it special from the moment he walked in the door. I decorated our place with balloons and signs and had a gift and a cake waiting for him on the table. He wanted a cake made like the one I did for my friends 2 yr old. You can find it  here as a post on CreativeKristi.com. I changed up the colors but used the same technique. This one was chocolate with Nutella filling and vanilla butter cream. My only problem with this cake was that the black icing took on an awful flavor because of the food coloring. I had to scrape the black parts off of my piece. Does anyone have a trick for making black icing that tastes good?? Oh! and that is also genuinely black? This one was sort of dark purple.

Purple Cake Truffles

One of my favorite things to make are cake truffles ( aka cake balls ). They are relatively easy and always surprise people with how great they taste. I can’t tell you how many compliments I get when I make these!  You can make them with any cake and frosting combination you like but since I was coloring these purple ( the birthday girl’s favorite color ) I decided that a simple white cake and vanilla buttercream would be perfect. I followed this recipe for the cake ( also found here ) . I didn’t follow a recipe for the frosting I simply combined butter, powdered sugar, vanilla and milk together until I got the taste I wanted.

I love experimenting with different colors when it comes to making these. These are rainbow truffles I made a little while back.

Vanilla Cake With Pumpkin Buttercream

Ever since Trader Joes introduced its new pumpkin butter I have been obsessed. ( I bought 6 jars! ). There is so much you can do with it! I have made a pumpkin cheesecake dip, a pumpkin crumb bar, I’ve spread it on toast, eaten it with cottage cheese and made a pumpkin butter cream frosting. Obviously if you know me you can guess that the latter is my favorite of them all!… I have a couple of friends with birthdays this month so I decided to use my new favorite frosting to make them a cake. I used this recipe for the cake and I made up the butter cream. ( see below )

Buttercream

1/2 cup unsalted butter

1/2 cup pumpkin butter

1 tsp pumpkin pie seasoning

Milk

Powdered Sugar

Blend the butter and the pumpkin butter until creamy. Add the Pumpkin Pie seasoning until combined. I then alternated sugar and milk until I got the consistency I wanted.

I used this same decorating technique on my birthday cake this past march

Chocolate Cupcakes

One of my best friends birthdays was this past week and I wanted to make her something chocolatey. My first thought was a cake but I knew that since she wasnt having a party it would go to waste. I decided on these rich chocolate cupcakes with this chocolate butter cream. They had a perfect rich chocolate taste and were super moist. The decorating didn’t come out how I had planned since I couldn’t find the tip I wanted to use but I think the taste over did the look anyway!

Chocolate Ice Cream

Homemade ice cream has a quality unlike any you will find in a store or ice cream shop. Maybe it’s because its full of whole ingredients without all of the preservatives and artificial flavorings or maybe it’s because of the anticipation of trying the final product while preparing the recipe. Either way nothing beats the first bite of soft cream right out of the ice cream maker. I have been craving dark chocolate quite a bit lately and decided that I needed to make some chocolate ice cream to satisfy my sweet tooth. I used this recipe which was perfectly rich and chocolatey.

New York Times Chocolate Chip Cookies

Drop cookies are definitely not one of my favorite desserts. I tend to lean more towards treats that are covered in frosting or swimming in gooey caramel or chocolate. However with all that’s been said about these NYT chocolate chip cookies (recipe here) I had to try them and see what all of the fuss was about. I didn’t have chocolate disks so I used semi sweet chips instead. The cookies were alright, not unlike any other I have had before….Maybe its because I didn’t use the disks??

Edamame Hummas

One of my favorite things to snack on is hummus. It’s the perfect mix of both healthy and satisfying and I am always looking for new flavors. When I came across this recipe for edamame hummus online I knew I had to give it a try. It’s a nice change from the usual chic pea hummus and it just as easy to make. I ended up adding a tbsp of black pepper to the mix for an added kick. Next time I’m going to try it with a tbsp less tahini for a thicker version.
